I am so excited to do a take of this iconic drink, originally from Asianpostoffice. I also gained a lot of inspiration from David Kringlunds YouTube about this drink. Here is my take on this drink adding some bubbles and vanilla flavours to it, recipe for 1 drink.

4 cl hellström gin
1.5 cl lemon juice
3 cl thai basil simple syrup*
A splash of neutral tonic
A pinch of vanilla sugar
Coconut foam*
5 dl sugar
5 dl water
1 st pot of thai basil
500 ml coconut milk
1 dl of sugar
*THAI BASIL SIMPLE SYRUP: Mix the sugar and water in a pan and bring to a heat. Let the sugar dissolve. Then cool down. Mix the simple syrup with thai basil leaves. Strain the syrup. Save some leaves to garnish the drink!
*COCONOT FOAM Let the coconut milk and sugar heat up in a pan, put in the fridge until cold. It can also work in the freezer if you have little time, but watch out so it does not freeze! It is very important that the foam is cold when you make this drink in order to get the fluffy foam!
HOW TO PUT THE DRINK TOGETHER: Fill a syphon with the cold coconut milk (if you don't have a syphon you can whip it).
Shake the gin, lemon juice, simple syrup, vanilla sugar cold with ice in a shaker (or something with a lid).
Put a big icecube in the glass
Strain the drink into the glass and add a splash of tonic
Pour the coconut foam over the drink. Garnish with thai basil
