This rhubarb drink is my new favourite 🌿 Inspired by Tofta beachhouse. To go out in a garden and pick your own rhubarb is the best thing ❤️

4 cl hellström gin
4 cl rhubarb simple syrup*
2 cl lemon juice
Top with tonic/sparkling water
Fresh rhubarb
Ice
5 dl of water
5 dl of sugar
1 msk vanilla sugar
About 4-6 rhubarb (it should fill up to the water in the sauce pan)
Drink: Add Hellström Gin, rhubarb simple syrup, lemon juice and ice and shake it until it is cold. Pour it into a nice glass filled with ice, top with a splash of tonic/sparkling water if you want and garnish with a thin slice of fresh rhubarb (I use the potato peeler to do this garnish).
Rhubarb simple syrup (enough for 12 drinks & lasts for weeks in the fridge): Place the chopped rhubarb, water and sugar in a saucepan and bring to a boil, turn down the heat and let it simmer until it is a mesh. Add the vanilla sugar. Remove from heat. Strain the rhubarb liquid through a fine mesh strainer into another clean pot, separating the rhubarb from the liquid. Let it cool.
Psst. I always store my simple syrup in an old Hellström Gin bottle in the fridge 🙏🏼 And I use the rhubarb compote/leftovers on my yoghurt in the morning.
