My favourite cocktail for New Years is this Frozen Gin Fizz, inspired from the Michelin restaurant El Bulli in Spain.

1.5 dl sugar
1.5 dl water
2.4 dl lemon juice
1.5 dl simple syrup
1.5 dl @hellstromgin
1.5 dl egg white
1.3 dl lemon juice
1.5 dl simple syrup
0.75 dl @hellstromgin
For the Simple Syrup: Mix the sugar and water in a small saucepan and stir over medium heat until dissolved. Remove from heat, allow to cool, then chill.
For the Frozen Lemon Juice: Mix all ingredients together and then freeze. Once frozen (after a few hours) blend until smooth and place back in freezer.
For the Lemon Foam: Alt 1. Whip egg whites to soft peaks, then fold in rest of the ingredients. Strain and fill a siphon with the mix. Charge the canister with a nitrogen cartridge. Alt 2. If you don’t have a siphon you can use a shaker or other bucket with a lid instead.
To Assemble and Serve: Fill cocktail glass ¾ full with frozen mixture, and top off with lemon foam. Top with dried rose petals or serve it as it is 🙏🏼🍸
