The peaches are here! It’s finally that time of year when the peaches are ripe and the tomatoes are everywhere. PLEASE make my favorite summer salad with creamy burrata and the best vinaigrette. Year after year I fall in love with this salad again. It’ summer on a plate and so yummy!

1.2 dl extra virgin olive oil
0.6 dl balsamic or champagne vinegar
1 msk honey
0.5 st shallot, finely chopped
1 st clove garlic, grated
1 tsk lemon zest
0.6 dl chopped fresh basil
2 msk chopped fresh oregano
1 msk chopped fresh dill
1 msk chopped fresh thyme
3.6 - 4.8 dl cherry tomatoes
2 - 3 st peaches, sliced into wedges
2.4 dl pitted fresh cherries
2 st balls burrata, at room temperature
0.6 dl toasted seeds
